gabi has been a part of a beautiful project here in the boulder area. she organizes social media for jackson's honest, a local food product company with a mission. read the jackson's honest manifesto for nutrient dense food here. at the heart of this family headed company is the desire to share their experience adapting a diet for their son jackson who was diagnosed with a rare autoimmune disease. jackson attended fairview high school until he sadly and unexpectedly passed away earlier this summer. jackson's diet included an at home favorite, tortilla and potato chips cooked in organic coconut oil. their potato and tortilla chip products for sale use a "low and slow" cooking process and are delicious....... believe me, i've snacked on quite a few. another part of their mission has been to create jackson's honest charitable foundation, to make a profound and positive difference in the lives of children afflicted by orphan diseases. an exciting event and opportunity took place this past sunday for the company as jackson's honest was featured on the season priemer of shark tank with a positive boost for the company's future from rohan oza one of the featured investors! (viewing party shown above). it has been a great experience for gabi, lending her skills for this good company, with good people, doing good things. here's to a positive and bright future for jackson's honest and jackson's honest charitable foundation, both legacies of a courageous, cheerful and inspiring young man.
