finals

it was such a gorgeous day that we decided to have sunday lunch outside.
by the middle of june we can't do this anymore because the mosquitos make it so miserable.

i must share this spinach salad recipe with you.
the recipe was given to me by my life long friend, maureen.
(we were already able to use our bibb lettuce from the garden!)

pear and sugared pecans salad

spinach
bibb lettuce
pear (thinly sliced)
red onion (thinly sliced)
pecans
1 cup sugar

pecans - put sugar in saucepan and heat slowly until starting to melt. stirring constantly, add a good sized handful or more of pecans and stir until coated and sugar is no longer granulated.  pour onto wax paper to cool, break into pieces.
salad dressing - 1/4 cup balsamic vinegar, 1 tablespoon dijon mustard, 2 - 3 tablespoons honey, salt and pepper, 1/2 cup olive oil
soak sliced pears in dressing for 5 - 10 minutes then toss all ingredients together and serve immediately.

finals......

classes are done for the school year.  so now it is finals week.
ben and caleb spent hours studying for tomorrow's chemistry exam....
with a few just dance 2 breaks.....
good luck, boys.

sab is fully immersed in final assignments and exams as well.

the boys ended up banning margo outside with roxy.  she can't help teasing, bothering and reminding them that she is done for the school year and feels as free as a bird.
