leek and potato soup after pure barre

even though we are in the middle of our third day of 70° weather, i still felt like
making soup for dinner.  i mean, it is winter already!
so, leek and potato soup it is.  my favorite recipe for this family favorite comes from
The New Best Recipe Cookbook from the editors of Cook's Illustrated.  their recipe is comfortingly entitled Rustic Potato-Leek Soup.

i love how this simple, humble soup made with only leeks, potatoes, butter and broth can boast such flavor and satisfaction each and every time it is served on a winter's evening.


the allure of the soup was also enhanced by the fact that i had just returned from meeting a friend for our first pure barre workout. these studios are showing up all around town.  whoa, if fine tuning toning is your thing, you've got to check it out.  i now know the precise location of my tensor fascia latae muscle.  y-ouch!  i also found there to be pure barre attire style - full length black leggings or tights tucked into socks.  it reminded me of my wardrobe when i was an aerobics a gym instructor back in the 80's, minus the leg warmers, sweatbands and high top reeboks of course, but i did see some neon!
