spare time



cool peach pie.

margo, nicole and i have been busy making gorgeous
summer dishes lately.


we also made
with raspberry zinger

my favorite iced tea flavor from one of our hometown claim to fame companies.....



margo and i enjoyed sipping it together on the porch.


getting creative with zucchini.....

after loaves of zucchini bread, zucchini grated into spaghetti bolognese,
sauteed, stuffed and baked........
we found a recipe for this cool and refreshing gorgeous and greenest of greens..........

cream of summer green soup

1 lb. fresh spinach
1 small head sweet leaf lettuce (approx. 3 cups, chopped)
1 medium zucchini (roughly 2 cups, chopped)
1 quart buttermilk
1 1/4 tsp. salt
lots of freshly-ground black pepper
1 tsp. tamari
1 tsp. fresh basil (chopped)
1 tblsp. dry sherry
1/4 cup each chopped parsley and scallions

*before serving, we also added: 1 tblsp. olive oil and a squeeze of fresh lemon juice

Remove stems from the spinach and steam it in one cup of water five minutes.  Puree both the spinach and zucchini thoroughly in their cooking water.  Combine in a kettle or large bowl. 
Puree the chopped lettuce in 1 1/2 - 2 cups of the buttermilk.  Add to zucchini and spinach mixture.  Whisk in remaining buttermilk, and add everything except the scallions and parsley. 
 Chill until very cold.

Serve garnished with parsley and scallions, and pass the pepper grinder around for extra-pepper lovers.
