paul fired up the pizza oven yesterday! its been a while and we were looking forward to some
homemade naan. it was absolutely delicious.
i'll take you through the process following paul step by step.
with paul there is no time for posing, he moves quickly..........
first, he makes the fire in the pizza oven using our oak firewood stash. they burn long and beautifully.
next, he heads inside to prepare the dough using a recipe from our wood fire cookbook collection lovingly given to us by margo & andrew.
after dissolving the yeast in warm water, he combines the rest of the ingredients and starts the kneading process using the dough hook in the kitchenaid.
its an hour wait until the dough has doubled in size so he starts preparing the rest of sunday lunch (thanks paul) and making numerous trips back and forth to the fire.
the dough is ready. he punches it down, kneads in garlic,
and rolls the naan dough into balls for a second rise.
a little while later, he is back outside. we're nearly there!
the coals are moved to one side, the dough is flattened and set into the hot 650°F oven.
the naan bakes for barely a minute each side. done!
he quickly transfers the naan inside to slather on a savory spread of olive oil and freshly crushed garlic......
served with a t-bone steak and grilled vegetables. paul, you've done it again! divine!
